Preheat oven to 375°F.
Rinse zucchini. Cut the stem off and then cut lengthwise into 3 or 4 thick planks, depending on size of squash.
Lay zucchini on a nonstick tray in the oven (or toaster oven) and bake for about 12 minutes.
Remove from oven. Leaving zucchini on the tray, spread a spoonful of tomato sauce and grated cheese on each piece. Return to oven and bake for another 10 to 12 minutes, until cheese is melted and zucchini is soft. Sprinkle dried herbs (and optional garlic powder) on top to finish.
