Easy Zucchini ‘ Pizza’

Transform ordinary zucchini squash into a crowd-pleasing, low-carb pizza alternative that even the pickiest eaters will enjoy. This simple recipe requires minimal preparation and is perfect for when your garden (or CSA box) is overflowing with zucchini.
Fresh zucchini slices become the perfect vessel for classic pizza flavors, eliminating the need for dough while boosting your vegetable intake. The two-step baking process ensures perfectly tender zucchini bases topped with bubbling cheese and savory tomato sauce.

Ingredients
  

  • 2 zucchini
  • ¼ cup tomato sauce
  • ¼ to ½ cup grated cheese (almost any cheese works)
  • Fresh or dried Italian herbs, (oregano, rosemary, thyme, marjoram, parsley are all great options)
  • Optional: garlic powder

Instructions
 

  • Preheat oven to 375°F.
  • Rinse zucchini. Cut the stem off and then cut lengthwise into 3 or 4 thick planks, depending on size of squash.
  • Lay zucchini on a nonstick tray in the oven (or toaster oven) and bake for about 12 minutes.
  • Remove from oven. Leaving zucchini on the tray, spread a spoonful of tomato sauce and grated cheese on each piece. Return to oven and bake for another 10 to 12 minutes, until cheese is melted and zucchini is soft. Sprinkle dried herbs (and optional garlic powder) on top to finish.
